Serves 16
Ingredients:
6 cup flour
½ Tbs. baking powder
½ Tbs. baking soda
½ tsp. salt
3 C. sugar
1 Tbs. vanilla
6 eggs
1 ½ C. oil
3 cup sour cream or yoghurt
1 heaping Tbs. mayonnaise is always added to our bread recipes to adjust for high altitude.
Topping
1 C. brown sugar
3 tsp. cinnamon
½ C. chopped nuts
Directions:
Mix eggs, oil, sour cream, & vanilla together. Add the baking powder, baking soda, salt & sugar to the flour. Add the flour mixture to the mixer a little at a time until thoroughly mixed.
Spray a 12x18 restaurant pan with vegetable oil. Put ½ the batter in the pan and cover with ½ the topping. Add the other ½ to the pan and stir 1 C. of jam in the batter lightly with a fork. Then add the other ½ of the topping.
Bake at 350* for 1 hour 20 minutes
