Sally's Crock Pickle Recipe - - From Sally St Claire - The Peck House - Empire, Colorado Sally makes these pickles each summer. They are serve with pate. The recipe came from Sally's college room mate's grand mother. The grand mother lived on a farm in Nebraska.
Soak medium pickling cucumbers in 1 cup pickling salt and 1 gallon of water. Drain, pour boiling water over them and stand overnight. Drain. Cover with 1 cup vinegar, 6 cups water, and alum the size of a walnut. Heat for 1 hour and drain. Cool the liquid and discard.
Ingrediants:
6 C. sugar
2 C. vinegar
1 stick cinnamon, broken up
1 tsp. whole cloves
1 tsp. whole allspice
Boil and pour over pickles. Do this for 3 days.
For larger quantity of pickles, 1 bucket of brine is 4 C. vinegar, 6 QT. water, 4 T. alum.
