Rum Cake with Rum Sauce Recipe - - Castle Marne Bed & Breakfast - Denver – CO These treats are the first to disappear from our Afternoon Tea table.

Serves 18



2/3 c. butter, softened

1 3/4 c. sugar

2 eggs

2 t. vanilla

3 c. flour

2-1/2 t. baking powder

1 t. salt

1-1/4 c. milk


Preheat oven to 350 degrees.  Cream butter in a large bowl.  Slowly add sugar.  Add eggs and vanilla.  Beat until light and fluffy.  Set aside.  Mix together flour, baking powder, and salt in a medium bowl.  Slowly add to butter mixture, alternately adding milk.  Beat one minute.  Spray small muffin pans with baking spray and bake 16-18 minutes or until golden brown.  While still warm, soak in rum sauce.  Frost with basic white frosting if desired.


Rum Sauce:

1/2 c. butter

1 c. sugar

1/4 c. water

1/2 c. rum


Melt together butter, sugar, and water in a small sauce pan.  Boil 5 minutes or until sugar is completely dissolved.  Remove from heat and stir in rum.  Let cool slightly and pour over cakes. Makes 18 small cakes
