Irma’s Oven Baked Catfish - - Irma Hotel - Cody, Wyoming
Ingredients: (serves 6)
6 six oz. farm raised catfish
4 C. Japanese bread crumbs
1 T. marjoram
1 T. dried chives
1 T. dried parsley
1 T. crushed red pepper
1 T. cayenne pepper
1 tsp. garlic powder
1 tsp. salt
1 tsp. freshly ground pepper
6 large eggs
Directions:
Preheat oven to 350°.
Mix all dry ingredients. Whip the eggs. Dip catfish in eggs, then in dry ingredients.
Place on a sheet pan lined with foil.
Bake for 20 minutes or until fork-tender.
