Eggnog Muffins
Eggnog Muffins - Diane Peiker Castle Marne B&B Denver CO the recipe was provided by a guest when Castle Marne first opened. It is easy and good for the Holidays.
Ingredients:
1 egg
1/3 C. canola oil
¾ C. eggnog
¼ C. rum
2 C. flour
1 T. baking powder
½ tsp. salt
2/3 C. sugar
1 tsp. nutmeg for garnish
Raw sugar
Preheat oven to 350°. In a small bowl stir together egg, oil, eggnog and rum and set aside. Sift together flour, baking powder, salt and sugar in a medium bowl. Make a well in the center and add the egg mixture. Mix together just until dry ingredients are moistened. Spray mini-muffin pans with cooking oil. Fill the cups with the muffin batter ¾ full and sprinkle on the tops with nutmeg and raw sugar.
Bake approximately 15-20 minutes or until the tops are lightly browned. Makes about 35 mini muffins
