Dark Chocolate Crema
10 oz dark chocolate
1 cup heavy cream
1/2 cup of half and half
6 oz sugar
1 Tbsp bourbon
3 egg yolks
insides of one vanilla bean
Use a double boiler to melt chocolate. Add creams and simmer. Add sugar, bourbon and vanilla. Slowly temper in your egg yolks. Serve warm on a chilly winter night.
It is definetly the time of year for this decadant dessert.
