Baked Chicken Salad - - Castle Marne Bed & Breakfast - Denver, Colorado

Serves 6

Ingredients:

2 T. butter

2 C. chicken cubed

2 C. celery chopped

½ C. slivered almonds

1 C. mayonnaise

½ tsp. salt

2 T. minced onion

2 T. lemon juice

½ C. American cheese, grated

1 C. crushed potato chips

1 pre-baked 9 inch pie shell

Directions:

Preheat oven to 350°F. In a large saucepan, melt butter. Add chicken cubes and sauté until cooked through. Remove from heat. Add celery, almonds, mayonnaise, salt, onion, lemon juice and cheese and mix well. Spoon mixture into the pie shell. Sprinkle crushed potato chips on top. Bake about 20 minutes or until heated through. Remove from oven, slice and serve.
